Ingredients:

all-purpose flour
large egg
regular milk
panko breadcrumbs
sea salt
ground black pepper
paprika
garlic powder
fresh squid rings (can be frozen)
Olive oil spray for cooking

Optional additional flavors: Red pepper flakes, cayenne pepper or ancho chili powder for a spicy kick. Onion powder, lemon pepper, bay leaf seasoning, Italian seasoning or a drizzle of lemon juice.

How to prepare squid in a deep fryer :
Preheat fryer to 400 degrees Fahrenheit. Create a dredging station with the egg and milk, flour mixture and seasoned breadcrumbs. Place flour in a shallow dish. Set flour aside. In another shallow dish, whisk egg and milk together. Set milk mixture aside. In a third separate bowl, mix together the panko, salt, pepper, paprika and garlic powder. Set the breadcrumb mixture aside. Rinse the squid in cold water. Then pat the squid rings with a paper towel before dipping to remove excess water. Dip the squid rings in the flour (shake off excess flour), then in the egg mixture, and finally in the seasoned panko mixture. Place the squid rings in a single layer in the fryer basket. Place extra rings on a baking sheet if working in batches. Spray the tops of the rings with non-stick cooking spray. Air-fry at 400 degrees F for 4 minutes. Turn the rings over at this stage, then spray the tops with olive oil cooking spray. Continue air-frying for a further 2-3 minutes, or until the squid are golden and crispy. If you're using frozen squid rings, you may need to add an extra 2-4 minutes of cooking time. Don't overcook, or you'll end up with tough squid. Place the squid on a wire rack to keep them crisp. Sprinkle with salt and black pepper as soon as they are removed from the fryer.
Optional dipping sauce: Cocktail sauce, marinara sauce, tartar sauce, sweet chili sauce, hot sauce, garlic aioli, béchamel sauce or homemade lemon garlic aioli.
Optional extra toppings: Lemon wedges, chopped parsley, grated Parmesan or fresh lemon juice.Cooking tips: You'll find fresh or frozen squid at most local grocery stores.
Substitutions: Use parchment paper for easy clean-up. Spray avocado oil instead of olive oil. Use cassava or tapioca flour instead of all-purpose flour. Replace milk with a cup of buttermilk.
I prepare this recipe in my Cosori 5.8-quart or 6.8-quart deep fryer. Depending on the size and wattage of your fryer, the cooking time may need to be adjusted by 1-2 minutes.
