WHY YOU'LL LOVE THIS RECIPE FOR AIR-FRIED TRUFFLE FRIES?
You'll love this trendy dish because it's the perfect addition to any game day event or entertaining family and friends for game night. They make an incredible side dish to eat with a favorite beef dish or grilled chicken.
Truffle fries have a gourmet taste and are an ideal side dish for an upscale sausage or burger night. These fries are gourmet bar food at its best, and anyone who tries them will absolutely devour them.
Ingredients:

Russet potatoes
chopped fresh parsley
white truffle oil
sea salt with truffles (or kosher salt)
parmesan cheese

Optional additional flavours: Chunks of garlic, paprika, truffle cheese, ground black pepper, pinch of red pepper flakes or ground rosemary.

How to prepare truffle fries in the air fryer :
Carefully remove the skin from the potatoes and cut them lengthwise into fries. Place the potatoes in a bowl of iced water and leave to soak for 10 minutes (this will crisp up the potatoes). While the fries are soaking, finely chop the parsley and set aside. Drain the potatoes and use kitchen paper or a clean kitchen towel to remove excess water from the potatoes. Transfer the potatoes to a medium-sized bowl. Mix the fries with the truffle oil and salt. Mix until the fries are completely coated. Place the truffle fries in the fryer basket and fry at 350 degrees F for 20 minutes, turning halfway through. Once fried, place the fries in a medium bowl and coat with parsley and Parmesan cheese. Mix well. Serve immediately when hot.
Optional dipping sauce: Ketchup, ranch dressing, blue cheese dressing, honey mustard sauce or creamy horseradish.
Optional garnishes: Chopped chives, melted cheese sauce, fresh thyme or avocado slices.
Cooking tips: If you're making fries in batches, place them on a wire rack to keep them crisp.
Substitutions: Use black truffle oil, olive oil or avocado oil if you don't have white truffle oil.
I prepare this dish in my 5.8-liter Cosori deep fryer. Depending on the size and power of your fryer, the cooking time may need to be adjusted by 1 to 2 minutes.

FAQ
What can I serve with this dish?
Almost anything will be delicious served with this dish. Lemon pepper chicken thighs or an upscale gourmet burger will go very well with these fries. You can also serve grilled mahi-mahi or a super-juicy filet mignon topped with blue cheese.
Can I use another type of potato to make this dish?
Yes, there are other types of potatoes you can use to make this dish. You can use red potatoes, white potatoes or Yukon Gold potatoes, but they won't be as crisp because they contain less starch. Baking potatoes (russet potatoes) have an excess of starch and will make these parmesan and truffle fries very crispy.
How to store leftovers?
Allow leftover truffle fries to cool completely before storing. Place them in an airtight container or resealable storage bag in your refrigerator for up to 5 days. If you plan to freeze them, place them in a freezer container or bag for up to 6 months.
What are truffles?
Truffles are found underground in heavily wooded areas, usually near the roots or base of trees. They have a robust flavor and odor and are a type of mushroom in the mushroom family. They are considered a culinary delicacy and are very expensive, as it takes a lot of effort to find and uproot them.
