The magic of egg rolls with Air Fryer: a crisp, delicious recipe

Visit egg rollsThese small, stuffed rolls of Asian origin have become extremely popular all over the world. They are traditionally prepared with a meat or vegetable filling, then rolled in a rice cake and deep-fried until golden and crispy. Today, we offer you a revisited, healthier version of this recipe thanks to the use of an Air Fryer.

Necessary ingredients

To make this recipe, you will need the following ingredients:

  • 20 rice cakes
  • 200g soy vermicelli
  • 50g dried black mushrooms
  • 1 carrot
  • 1 onion
  • 100g bean sprouts
  • 2 clovesgarlic
  • 1 piece fresh ginger (about 1cm)
  • 2 tablespoons nuoc-mâm sauce (fish sauce)
  • Salt and pepper
  • A few sprigs of coriander
  • 1 tablespoon neutral oil (sunflower or peanut type)

Preparing egg rolls with the Air Fryer

Preparing the garnish

To begin, soak the soy vermicelli and black mushrooms in hot water for about 10 minutes. Meanwhile, peel and finely chop the garlic and ginger. Chop the onion into small pieces.

Once the vermicelli and mushrooms have softened, drain well and chop finely. Grate the carrot and mix with the bean sprouts, vermicelli and mushrooms. Then add the garlic, ginger, onion, nuoc-mâm sauce and salt and pepper to taste. Finally, chop a few sprigs of coriander and add to the mixture.

Rolling egg rolls

Soak a rice cake in a pan of hot water to soften it. Place a small portion of the filling in the center of the patty. Fold the sides inwards, then roll up firmly to form a nem. Repeat until you've used up all the ingredients.

Air Fryer cooking

Preheat your Air Fryer to 180°C. Brush the egg rolls with a little neutral oil, then place them in the basket without touching. Bake for around 10 minutes, turning the nems halfway through, until golden brown and crisp.

Variations and ideas for accompaniment

This recipe is very versatile and can be adapted to suit your own tastes. Here are a few ideas for personalizing your egg rolls:

  • Add meat: You can add ground pork or finely chopped peeled shrimp to the filling for a more traditional version.
  • Vary your vegetables: Replace the carrot with grated white cabbage or add diced bell bell pepper for a touch of color.
  • More flavour: Add chopped fresh lemongrass or red curry paste for an even stronger flavour.

To accompany your egg rolls, you can serve a simple nuoc-mâm sauce diluted with a little water, lime juice and sugar, or prepare a homemade sweet and sour sauce made from ketchup, rice vinegar, sugar and soy sauce. You can also add a touch of chilli pepper if you like spicy flavours.
